Quick Italian Beef Sandwiches

Italian Beef Sandwiches are a delicious classic, but making them the traditional way is time-consuming.  Want your Italian Beef without the time commitment?  Try this delicious recipe – only 10 minutes prep time and 15 minutes cook time. Serves 6.



2 lbs Roast Beef
2 Tbs cooking oil
1 bag Mini Sweet Peppers, sliced in 1/2 – 1/” strips
1/2 Sweet Onion, sliced into 1/2″ slices
1/4 c water*
1 package (6) Hero Rolls
1/2 lb Medium Sharp Provolone, thin sliced
Red Pepper Flakes, to taste, OPTIONAL



Preheat oven to 350°F.  Place Hero Rolls on a baking sheet and bake for 10 minutes.  Let cool.

Rough chop the Roast Beef.  Heat cooking oil in a skillet over medium heat; add the Peppers and Onion.  Sauté, stirring for 5-10 minutes, until Onions are soft. Add the Roast Beef and the water*. Simmer for 5 minutes.  Add Provolone, broken into pieces, and stir.  Add Red Pepper Flakes if more heat is desired. Fill rolls with meat mixture.  Serve with your favorite sides and/or chips.

* A medium to full-bodied red wine could be used in place of the water for a richer flavor.
