Manchego Date Stuffing

1/2 lb Spanish Dry Chorizo, chopped
6 T Butter
2 c. diced onion
2 c. diced celery
1 T minced oregano
1 T minced thyme
salt & Pepper
3 c chicken or vegetable broth
2 eggs
1/4 c chopped parsley
16 cups cubed stale bread (white, sourdough, whole grain, or mixed)
1 c chopped dates
8 oz Manchego cheese in small cubes
Butter for top

Sauté chorizo in 6 T butter. Add onions, celery and spices and cook for 5 minutes. Add broth and bring to a simmer. In a large bowl, beat eggs and parsley together. Toss with bread cubes, dates and Manchego. Combined broth vegetable mixture and bread mixture, then transfer to a buttered baking dish. Dot with butter. Cover and bake at 375° for 30 minutes. Uncover and bake for 30 minutes more.
